restaurants in Atlantic City, is cooking up something special. The critically-
acclaimed Grand Sunday Brunch at Caruso's is celebrating its one-year 
anniversary this month and to commemorate the event, the master chefs at The 
Grand are sharing some of their delicious Brunch dishes with guests in their 
very own recipe book featuring 52 one-of-a-kind recipes.

The book features delectable dishes such as Smoked Salmon & Dill Quesadilla 
with Salmon Caviar; Fresh Sturgeon with Peppar Vodka, Beluga Caviar & Chives; 
and Veal Tenderloin Medallions with Madeira & Black Truffle Sauce. The 
Grand's magnificent Sunday Brunch features seven extraordinary live cooking 
stations including caviar, sushi, pasta, chef's specialties, omelets, carving 
station and dessert station. Other delicacies to tempt your palate include 
imported Australian rack of lamb, Washington State Skokum oysters, maine 
lobster and Taittinger French champagne. The Grand Sunday Brunch is available 
Sunday from 10:00 AM to 3:00 PM at $45.00 per person (tax included).

Caruso's, The Grand's quaint gourmet Italian restaurant, has also introduced 
a new monthly menu featuring Chef Sandro Marcato's "Regional Tour of Italy." 
The monthly specials feature authentic dishes from areas such as Tuscany, 
Sicily, Piedmont, Emilia-Romagna, and Veneto. While caruso's menu continues 
to feature the finest traditional Italian specialties, "Regional Tour of 
Italy" highlights the newest contemporary Italian dishes now offered in the 
restaurant.

The Grand's famous Oak's Steakhouse, has also premiered a new menu featuring 
some of the following mouth-watering dishes:

   Cajun Fried Oyster with Andouille Sausage and Sweet Creole Sauce.
   Wild Mushroom & Vegetable Strudel with grilled vegetables, 
     red & yellow pepper oils
   Beefeater Pizza (grilled tenderloin on focaccia with vidilia onions,
     shiitake mushrooms, pepperjack cheese & roasted tomatoes

Brunch had returned! This time, it's even bigger and better and replaces the 
Cornucopia Sunday Breakfast Buffet.

At an affordable $14.95 per person, the Cornucopia Buffet Sunday Brunch will 
be available each Sunday from 9:00 AM - 1:00 PM.

Guests can enjoy a grand brunch that includes delicious dishes like scrambled 
eggs with lox and onions, boneless honey ham, smoked salmon, whitefish salad, 
creamed chipped beef with buttermilk biscuits, cheese blintzes with fruit

PEREGRINES' AT THE GRAND EARNS SOUTH JERSEY'S ONLY

PRESTIGIOUS AWARD OF EXCELLENCE FROM WINE SPECTATOR MAGAZINE.


Although opened for just over a year, Peregrines' at The Grand, named for the 
endangered peregrine falcons that nest on the hotel's penthouse level every 
Spring, has already earned critical acclaim. The American Academy of 
Restaurant and Hospitality Sciences has already honored Peregrines' 
outstanding continental cuisine with their Five-Star Diamond Award and the 
restaurant's chef, Sam Cooper, with a Gold Medal. And now, Peregrines' superb 
wine list is earning equal recognition. In their September 30 issue, Wine 
Spectator Magazine has recognized Peregrines' superb wine list by awarding 
the restaurant with their prestigious Award of Excellence.

"We're thrilled not only with the honor, but with the fact that this places 
Peregrines' in an elite category with other winners around the world," said 
Grand Vice President James Kinee. Awarded annually by Wine Spectator since 
1981, the much sought-after Awards of Excellence are presented to restaurants 
for wine lists that demonstrate a level of commitment appropriate to the 
restaurant's menu and clientele. Peregrines' is only 1 of 11 restaurants in 
New Jersey honored with such an award and the only one in the Southern area 
of the state.

At Peregrines', guests may select from an imaginative a la carte menu, or 
enjoy a complete degustation menu, which is also available with a sampling of 
4 to 6 wines carefully selected to accompany each course. "With our emphasis 
on the degustation menu, it's crucial to maintain an extensive wine cellar 
since chef Cooper's creativity shouldn't be hampered by an inability to match 
an appropriate wine to his creation," said Kinee. "However, since we are a 
Casino Resort, we encounter a broad range of guests, ranging from true 
connoisseurs to patrons who may be unfamiliar with fine food and wine. The 
challenge for us is to balance our list to include not only elite wines, but 
familiar wines that may be preferred by patrons enjoying a la carte 
selections,so that we can ensure an enjoyable dining experience for each of 
our guests."

Peregrines' wine list, which earned this prestigious honor, houses over 
20,000 bottles carefully stored at a precise 45 degrees Fahrenheit. Among the 
elite wines on the list mentioned by Kinee are a 1959 Chateau Lafite, a 1959 
Lataur and a 1961 Chateau Mouton.

Peregrines' a la carte entrees range from $28 to $38. The degustation menu is 
available with wines for $90 and without wines for $60. For reservations,

THE GRAND'S PEREGRINE FALCONS ARE HATCHING

SOMETHING SPECIAL ON THE INTERNET!


Atlantic City, NJ --- The Grand Casino Resorts has teamed up with the New 
Jersey Department of Environmental Protection Division of Fish, Game and 
Wildlife, and Wildlife Network to bring a unique, educational opportunity and 
wildlife phenomenon to the world via the internet.

The Peregrine Falcon's nest, located on the ledge outside of the butler's 
kitchen on the Penthouse floor of the casino/hotel, is now host to the site 
of a high-tech computer system. A state-of-the-art camera has been carefully 
mounted inside the window area to photograph rare moments of the birds and 
their nest while they await the hatching of four Peregrine eggs.

For years, The Grand's butlers have always assisted the Division of Fish, 
Game and Wildlife in keeping records and monitoring the progression of the 
Peregrine's during the nesting periods. With the continuous on-line live 
computer link, wildlife authorities may now track the progress of the birds 
via the internet, along with nature lovers alike.

Currently, there are 14 other pairs of Peregrines nesting in the state on man-
made towers and major bridges. The pair at The Grand are one of only two 
pairs nesting on urban buildings in New Jersey. Peregrines were first 
reported at The Grand site in 1985, but did not lay eggs until 1988. The 
birds are still listed as endangered on both the state and federal levels.

President and Chief Operating Officer, Wallace R. Barr, expressed his 
concerns for the endangered Peregrines and said, "The Grand is proud to be 
developed as a site for Wildlife Network that will assist with the raising 
the levels of awareness for these endangered falcons. We are delighted to 
provide nature enthusiasts with a glimpse of the rare image of the first 
chick being hatched, as well as their first flights from our tower."
