PEREGRINES' AT THE GRAND EARNS SOUTH JERSEY'S ONLY

PRESTIGIOUS AWARD OF EXCELLENCE FROM WINE SPECTATOR MAGAZINE.


Although opened for just over a year, Peregrines' at The Grand, named for the 
endangered peregrine falcons that nest on the hotel's penthouse level every 
Spring, has already earned critical acclaim. The American Academy of 
Restaurant and Hospitality Sciences has already honored Peregrines' 
outstanding continental cuisine with their Five-Star Diamond Award and the 
restaurant's chef, Sam Cooper, with a Gold Medal. And now, Peregrines' superb 
wine list is earning equal recognition. In their September 30 issue, Wine 
Spectator Magazine has recognized Peregrines' superb wine list by awarding 
the restaurant with their prestigious Award of Excellence.

"We're thrilled not only with the honor, but with the fact that this places 
Peregrines' in an elite category with other winners around the world," said 
Grand Vice President James Kinee. Awarded annually by Wine Spectator since 
1981, the much sought-after Awards of Excellence are presented to restaurants 
for wine lists that demonstrate a level of commitment appropriate to the 
restaurant's menu and clientele. Peregrines' is only 1 of 11 restaurants in 
New Jersey honored with such an award and the only one in the Southern area 
of the state.

At Peregrines', guests may select from an imaginative a la carte menu, or 
enjoy a complete degustation menu, which is also available with a sampling of 
4 to 6 wines carefully selected to accompany each course. "With our emphasis 
on the degustation menu, it's crucial to maintain an extensive wine cellar 
since chef Cooper's creativity shouldn't be hampered by an inability to match 
an appropriate wine to his creation," said Kinee. "However, since we are a 
Casino Resort, we encounter a broad range of guests, ranging from true 
connoisseurs to patrons who may be unfamiliar with fine food and wine. The 
challenge for us is to balance our list to include not only elite wines, but 
familiar wines that may be preferred by patrons enjoying a la carte 
selections,so that we can ensure an enjoyable dining experience for each of 
our guests."

Peregrines' wine list, which earned this prestigious honor, houses over 
20,000 bottles carefully stored at a precise 45 degrees Fahrenheit. Among the 
elite wines on the list mentioned by Kinee are a 1959 Chateau Lafite, a 1959 
Lataur and a 1961 Chateau Mouton.

Peregrines' a la carte entrees range from $28 to $38. The degustation menu is 
available with wines for $90 and without wines for $60. For reservations,
